Lemon Poppyseed Oatmeal Breakfast
Ingredients
- 1/2 cup rolled oats
- 2 tsp chia seeds
- 1 tsp poppyseeds
- Pinch of cardamom
- Pinch of salt
- 1 cup unsweetened almond milk
- 1 tbsp maple syrup (or less if you prefer)
- Zest of half a small lemon
- 1 tbsp lemon juice
Preparation
In a saucepan, add all ingredients except the lemon juice
Stir well and bring to a simmer, allowing it to thicken for about 3-5 minutes
Remove from heat and stir in the lemon juice
Adjust sweetness to your preference
Tips
Serve with fresh berries, banana, and a few dollops of vegan yogurt
