Apple Cider Oatmeal Breakfast Bowl

Ingredients

  • 1 apple, diced
  • 3 tbsp apple cider (or apple juice)
  • Pinch of salt
  • 2 tsp maple syrup
  • Pinch of apple pie spice or cinnamon
  • 1/2 cup rolled oats
  • 1/4 tsp apple pie spice or cinnamon
  • 1/4 cup apple cider
  • 1 cup unsweetened almond milk or soy milk
  • 1/2 tbsp ground flax seed

Preparation

  1. In a saucepan, add diced apples and sauté for about 2 minutes.

  2. Add cider, spice, maple syrup, and a pinch of salt, then sauté until apples are softened; reserve some apples if desired for topping.

  3. Add the remaining oatmeal ingredients, stir, bring to a simmer, and cook for 3-5 minutes, stirring regularly, until oats are cooked.

Serving suggestions

  1. Top with nut butter and extra fruits for added flavor.
