Meal Prep Zucchini Oats

Ingredients

  • 2 1/2 cups rolled oats
  • 3 cups unsweetened almond milk
  • 1/2 cup canned full fat coconut milk
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3 tbsp ground flax seed
  • 1 large zucchini grated

Preparation

  1. Place all ingredients in a large sauce pan and give a good stir.

  2. Cook on a low simmer allowing oats to thicken.

  3. Cook time may vary, but this took 10-15 minutes in total.

  4. Alternatively, if using a pressure cooker, place all ingredients in the pot chamber, stir and set to manual pressure for 3 minutes with natural pressure release.

Tips

  1. Feel free to sweeten with maple syrup to taste.

  2. Stir in a little dollop of vegan yogurt for added creaminess.

  3. Top with fruits like mango and kiwi, and seeds such as pepitas for extra flavor and texture.
