Coconut Zoats with Zucchini and Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 tsp chia seeds
  • 1/2 small zucchini, grated
  • 2 tbsp coconut cream
  • 1 cup unsweetened almond milk

Preparation

  1. Combine all ingredients in a saucepan and bring to a simmer.

  2. Stir and cook for about 5 minutes or until oats are nice and fluffy.

  3. Adjust salt to taste.

  4. If needed, sweeten to taste.

  5. Optionally, add extra nut butter and fruit on top for more flavor.
