Coconut Zoats with Zucchini and Oats
Ingredients
- 1/2 cup rolled oats
- 1/4 tsp cinnamon
- Pinch of salt
- 1 tsp chia seeds
- 1/2 small zucchini, grated
- 2 tbsp coconut cream
- 1 cup unsweetened almond milk
Preparation
Combine all ingredients in a saucepan and bring to a simmer.
Stir and cook for about 5 minutes or until oats are nice and fluffy.
Adjust salt to taste.
If needed, sweeten to taste.
Optionally, add extra nut butter and fruit on top for more flavor.
