Zucchini Oats Breakfast

Ingredients

  • 1/2 cup rolled oats
  • 1/2 a small zucchini, grated
  • 1/2 tbsp chia seeds
  • 1 medjool date
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 cup unsweetened almond milk

Preparation

  1. Combine all ingredients in a sauce pan and bring to a simmer. As this cooks, use spoon or spatula to break up the date as it softens and stir as oats thicken

  2. Topped this bowl with peanut butter, banana, blueberries, dried mulberries, hemp hearts, cacao nibs, and pepitas
