Zucchini Oats Inspired by Bread

Ingredients

  • 1/3 cup rolled oats (or use 1/2 cup)
  • 1/2 a small zucchini, grated
  • 1/2 tbsp chia seeds
  • 1 medjool date or 2 tsp maple syrup
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 cup unsweetened almond milk

Toppings

  • mango
  • kiwi
  • strawberry
  • pepitas
  • hemp hearts

Preparation

  1. Combine all ingredients in a saucepan and bring to a simmer.

  2. Use a spoon or spatula to break up the date as it softens and stir as the oats thicken.

  3. Serve and enjoy with toppings.
