Zucchini Oats Inspired by Bread
Ingredients
- 1/3 cup rolled oats (or use 1/2 cup)
- 1/2 a small zucchini, grated
- 1/2 tbsp chia seeds
- 1 medjool date or 2 tsp maple syrup
- 1/4 tsp cinnamon
- Pinch of salt
- 1 cup unsweetened almond milk
Toppings
- mango
- kiwi
- strawberry
- pepitas
- hemp hearts
Preparation
Combine all ingredients in a saucepan and bring to a simmer.
Use a spoon or spatula to break up the date as it softens and stir as the oats thicken.
Serve and enjoy with toppings.
