Nutritious Vegan Zoats with Almond Milk

Ingredients

  • 1/2 cup rolled oats
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 cup unsweetened almond milk
  • 1/2 small zucchini grated
  • 1-2 tsp chia seeds or 1 tbsp ground flax seed
  • 1 tsp maple syrup (optional)

Preparation

  1. Add all ingredients to a sauce pan and bring to a simmer.

  2. Allow oats to cook and thicken while stirring for about 5-8 minutes or until you achieve your desired thickness.
