Healthy Zucchini Oats Breakfast Bowl
Ingredients
- 1/2 cup rolled oats
- 1/2 small zucchini, grated
- 1/2 tbsp chia seeds
- 1 medjool date
- 1/4 tsp cinnamon
- Pinch of salt
- 1 cup unsweetened almond milk
Toppings
- peanut butter
- banana
- blueberries
- dried mulberries
- hemp hearts
- cacao nibs
- pepitas
Preparation
Combine all ingredients in a saucepan and bring to a simmer.
Use a spoon or spatula to break up the date as it softens and stir until the oats thicken.
