Healthy Zucchini Oats Breakfast Bowl

Ingredients

  • 1/2 cup rolled oats
  • 1/2 small zucchini, grated
  • 1/2 tbsp chia seeds
  • 1 medjool date
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 cup unsweetened almond milk

Toppings

  • peanut butter
  • banana
  • blueberries
  • dried mulberries
  • hemp hearts
  • cacao nibs
  • pepitas

Preparation

  1. Combine all ingredients in a saucepan and bring to a simmer.

  2. Use a spoon or spatula to break up the date as it softens and stir until the oats thicken.
