Zucchini Oats Breakfast Bowl

Ingredients

  • 1/2 cup rolled oats
  • 1/2 a small zucchini, grated
  • 1/2 tbsp chia seeds
  • 1 medjool date
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 cup unsweetened almond milk

Preparation

  1. Combine all ingredients in a saucepan and bring to a simmer.

  2. As it cooks, use a spoon or spatula to break up the date as it softens.

  3. Stir as the oats thicken.

  4. Optionally, add toppings like buckwheat, mulberries, cacao nibs, peanut butter, pepitas, and hemp seeds for extra flavor and nutrition.
