Meal Prep Zucchini Oats
Ingredients
- meal prep zucchini oats
- 2 1/2 cups rolled oats
- 3 cups unsweetened almond milk
- 1/2 cup full fat coconut milk
- 2 tsp cinnamon
- 1/2 tsp salt
- 3 tbsp ground flax seed
- 1 large zucchini grated
Preparation
Place all ingredients in a large sauce pan and give a good stir
Cook on a low simmer allowing oats to thicken
Cook time may berry, but this took 10-15 minutes in total
If you have a pressure cooker you can also place all ingredients in the pot chamber, stir and set to manual pressure for 3 minutes with natural pressure release
Feel free to sweeten with maple syrup, but honestly, these tasted fantastic as is
