Meal Prep Zucchini Oats

Ingredients

  • meal prep zucchini oats
  • 2 1/2 cups rolled oats
  • 3 cups unsweetened almond milk
  • 1/2 cup full fat coconut milk
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3 tbsp ground flax seed
  • 1 large zucchini grated

Preparation

  1. Place all ingredients in a large sauce pan and give a good stir

  2. Cook on a low simmer allowing oats to thicken

  3. Cook time may berry, but this took 10-15 minutes in total

  4. If you have a pressure cooker you can also place all ingredients in the pot chamber, stir and set to manual pressure for 3 minutes with natural pressure release

  5. Feel free to sweeten with maple syrup, but honestly, these tasted fantastic as is

  6. My taste buds might be a bit different, so don’t feel you need to full trust my opinion
