Zucchini Oats Breakfast Bowl

Ingredients

  • 1/3 cup rolled oats
  • 1/2 tbsp ground flax seed
  • 1 tbsp hemp hearts
  • 3 deglet noor dates, diced (OR 1-2 tsp sugar)
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/3 or 1/2 grated zucchini (adjust to preference)
  • 1 cup unsweetened soy milk

Preparation

  1. Add all ingredients to a sauce pan and bring to a simmer.

  2. Allow to cook and thicken while you stir.

  3. Once it simmers, cook for 3-5 minutes or until it’s at your desired consistency.
