Meal Prep Zucchini Oats
Ingredients
- 2 1/2 cups rolled oats
- 3 cups unsweetened almond milk
- 1/2 cup canned full fat coconut milk
- 2 tsp cinnamon
- 1/2 tsp salt
- 3 tbsp ground flax seed
- 1 large zucchini grated
Preparation
Place all ingredients in a large sauce pan and give a good stir
Cook on a low simmer allowing oats to thicken; cook time may vary, but this took 10-15 minutes in total
Pressure cooker method
Place all ingredients in the pot chamber, stir and set to manual pressure for 3 minutes with natural pressure release
Tips
Feel free to sweeten with maple syrup, but it tastes fantastic as is
Stir in a little dollop of vegan yogurt for extra creaminess
Top with fruit like mango or kiwi and seeds such as pepitas for added flavor and texture
