Lemon Blueberry Oatmeal Bowl

Ingredients

  • 1/2 cup rolled oats
  • 1/2 tbsp ground flaxseed
  • 2 tsp maple syrup or other sweetener of your choice
  • 1/3 cup frozen blueberries
  • Pinch of cinnamon
  • Pinch of salt
  • 1 cup unsweetened vanilla almond milk or milk of your choice
  • Pinch of fresh lemon zest

Preparation

  1. Bring all of your ingredients except lemon zest to a simmer in a sauce pan.

  2. Stir frequently and allow to thicken to your desired consistency for about 3-5 minutes.

  3. Remove from heat and stir in fresh lemon zest.

  4. Adjust sweetness and salt to your liking and serve.

Notes

  1. Blueberries are rich in antioxidants and provide good fiber content.

  2. Top with mango, almond butter, hemp hearts, and pepitas for added flavor and nutrition.
