Vegan Lemon Poppyseed Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 2 tsp chia seeds
  • 1 tsp poppyseeds
  • Pinch of cardamom
  • Pinch of salt
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup (or less if you prefer)
  • Zest of half a small lemon
  • 1 tbsp lemon juice

Preparation

  1. In a saucepan, add all ingredients except the lemon juice.

  2. Stir well, bring to a simmer, and allow to thicken for about 3-5 minutes.

  3. Remove from heat and stir in the lemon juice.

  4. Adjust sweetness to your preference.

Serving suggestions

  1. Serve with fresh berries, banana, and vegan yogurt.
