Caramelized Banana and Blueberry Oatmeal
Ingredients
- 1 banana
- 2 teaspoons maple syrup
- 1/2 cup rolled oats
- 1 cup unsweetened almond milk
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/2 cup frozen blueberries
- Zest of half a lemon
Preparation
Spray a non-stick saucepan with a little oil, add the banana coins, and drizzle with maple syrup.
Cook evenly on all sides until bananas start to brown.
Transfer the bananas to a bowl.
Using the same pan, add the rolled oats, unsweetened almond milk, cinnamon, salt, and lemon zest.
Cook on low to medium heat until thickened to your liking.
Spoon the oatmeal into a serving bowl and top with the caramelized bananas and frozen blueberries.
