Date-Sweetened Oatmeal Breakfast Bowl

Ingredients

Oat

  • 1/2 cup rolled oats
  • 1 tsp chia seeds
  • 1 medjool date, pitted and mashed
  • 1 cup unsweetened almond milk
  • 1/2 tsp cinnamon
  • Pinch of salt

Jam

  • 1 cup frozen fruit
  • 1 tsp chia seeds

Optional toppings

  • Peanut butter
  • Pepitas
  • Hemp hearts
  • Pomegranate seeds

Preparation

  1. Add all oat ingredients to a saucepan and bring to a simmer.

  2. Cook and thicken while stirring for about 5 minutes, then serve.

Jam

  1. Combine 1 cup frozen fruit and 1 tsp chia seeds in a microwave-safe bowl.

  2. Microwave for 1 minute and 30 seconds or until fruit is thawed.

  3. Mash with a spoon or fork and mix well to ensure chia seeds are incorporated.

  4. Allow to sit for about 10 minutes or until thickened.

Assembly and tips

  1. Top the cooked oats with peanut butter, chia jam, pepitas, hemp hearts, and pomegranate seeds for added flavor and texture.

  2. Use the chia jam to top the oats or store it in a sealable jar in the refrigerator to use as a spread for other dishes.
