Creamy Banana Apricot Oats

Ingredients

  • 1/4 cup rolled oats
  • 1/4 cup quick oats
  • Pinch of salt
  • Pinch of cardamom
  • Pinch of nutmeg
  • 2 dried apricots, diced
  • 1/2 banana, sliced
  • 1 cup unsweetened almond milk or oatmilk
  • 1/4 cup water

Preparation

  1. Add all ingredients to a saucepan and bring to a simmer.

  2. Continuously stir until the oats reach your desired consistency.

  3. Stir in extras if desired or top with your favorite toppings.

Tips

  1. To make creamier, add 1-2 tablespoons of your favorite plant-based yogurt.

  2. For example, top with strawberries, extra banana slices, peanut butter, hemp hearts, and pepitas.
