Banana Walnut Baked Oats
Ingredients
- 1 flax egg
- 1 mashed banana
- 1 tsp baking powder
- 1 heaping tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 tsp vanilla
- 2 tbsp melted coconut oil
- 1/2 cup chopped walnuts
- 2 cups gf oats
- 1/4 cup maple syrup
- 1 3/4 cup cashew milk
- 1 banana
- Homemade granola or store bought
- Yogurt or kefir
Preparation
Preheat oven to 375.
Grease an 8x8 or desired baking dish.
In a large measuring cup, prepare flax egg and set aside.
Mash banana into flax and add baking powder, spices, salt, vanilla, and coconut oil, then stir together.
Add in walnuts, oats, maple syrup, and cashew milk.
Pour oat mixture into the pan and place sliced banana on top.
Place in preheated oven for 40-45 minutes.
Tips
This is perfect for weekend breakfast, afternoon snack, or cut up into wedges as a snack on the go.
Add coconut kefir, homemade or store-bought granola, and blueberries for a pop of brightness.
