Banana Cassava Oat Pancakes
Ingredients
- 1 mashed banana
- 1 cup cashew milk
- 1 tsp apple cider vinegar
- 1/2 tsp vanilla
- 1 flax egg
- 1 tsp cinnamon
- 2 tbsp oil
- Pinch salt
- 1 cup cassava flour
- 1/2 cup oats
- 1 tbsp baking powder
Preparation
Prepare the flax egg by mixing ground flaxseed with water and letting it sit to thicken.
Mash the banana in a bowl.
In a large bowl, combine the cashew milk, apple cider vinegar, vanilla, oil, cinnamon, and mashed banana.
In another bowl, mix together the cassava flour, oats, baking powder, and salt.
Combine the wet and dry ingredients until just blended, being careful not to overmix.
Heat a skillet or griddle over medium heat and lightly grease with oil.
Pour batter onto the skillet to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown on both sides.
Serve warm.
