Delicious Buckwheat Vegan Pancakes

Ingredients

Flax egg

  • 2 tablespoons freshly ground flaxseed
  • 5 tablespoons warm water

Wet

  • 1 and 1/4 cups coconut milk
  • 1/2 cup water
  • 2 teaspoons apple cider vinegar
  • 1.5 teaspoons agave syrup

Dry

  • 1 cup buckwheat flour
  • 1 cup cornmeal
  • 1/4 cup arrowroot powder
  • 2 tablespoons baking powder
  • 1 teaspoon salt

Preparation

  1. Combine the flax egg ingredients and let sit for 5 minutes.

  2. Mix the wet ingredients together, then add the flax egg and let the mixture sit for a few minutes.

  3. In a large bowl, mix the dry ingredients.

  4. Add the wet mixture to the dry ingredients and whisk together without over stirring.

  5. Spray a skillet with olive oil and heat over medium-high heat.

  6. When a drop of water sizzles, add 1/2 cup of batter to the pan and cook until the first side is well browned before flipping.

  7. Use additional spray if needed and cook the other side until done.

Tips

  1. Serve with pure vegan maple syrup.
