Simple Vegan Buckwheat Pancakes

Ingredients

  • 150g buckwheat flour
  • 100g gluten-free plain flour
  • 360ml non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp neutral oil
  • 2 tsp caster sugar
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp chia seeds

Preparation

  1. Mix the non-dairy milk and apple cider vinegar in a bowl and set aside for 10 minutes.

  2. Meanwhile, mix the remaining ingredients in a large mixing bowl.

  3. Add the vegan buttermilk and stir until combined.

  4. Pour batter to a heated frying pan and cook for 2 minutes on each side.
