Fluffy Vegan Pancakes with Berries
Ingredients
- 1 1/2 cups flour
- 1 1/2 cups dairy-free milk
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 tablespoons maple syrup
- 2 tablespoons apple cider vinegar

Preparation
Combine dairy-free milk and apple cider vinegar, then set aside.
In another bowl, combine flour, baking powder, baking soda, and salt, then whisk together.
Add the milk and vinegar mixture to the dry ingredients and combine.
Add vanilla and maple syrup, then combine.
Allow the batter to rest for a few minutes to maximize fluffiness.
Scoop the desired amount of batter into a heated, buttered vegan pan without stirring.
Drop raspberries and blueberries onto the pancakes.
Flip the pancakes when they are bubbly and no longer wet in appearance.
