Fluffy Diner-Style Vegan Pancakes

Ingredients

  • 2 1/2 cups all purpose flour
  • 1/2 cup white rice flour or additional all purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups non-dairy milk
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons golden ground flax or 1/2 cup applesauce
  • 1 teaspoon vanilla
  • 4 tablespoons Earth Balance, melted
  • 1 tablespoon sweet miso, optional

Preparation

  1. Mix together the milk, vinegar, vanilla, and flax and let it sit while you prepare the other ingredients.

  2. In a large bowl, mix together the flour, sugar, salt, baking powder, and baking soda.

  3. Melt the butter.

  4. Pour the milk mixture into the dry ingredients and fold a few times, scraping the bottom of the bowl.

  5. Mix in the melted butter until the batter is mostly smooth with a few small clumps, but do not overmix.

  6. Let the batter sit while you heat your griddle or pan.

  7. Melt a little butter on the cooking surface and cook 1/4 cup of batter per pancake.

Tips

  1. The sweet miso adds tang and umami and is highly recommended.

  2. Rice flour provides iconic softness and can be substituted with all-purpose flour.

  3. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free blend.
