Fluffy Diner-Style Vegan Pancakes
Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup white rice flour or additional all purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups non-dairy milk
- 1 tablespoon apple cider vinegar
- 2 tablespoons golden ground flax or 1/2 cup applesauce
- 1 teaspoon vanilla
- 4 tablespoons Earth Balance, melted
- 1 tablespoon sweet miso, optional
Preparation
Mix together the milk, vinegar, vanilla, and flax and let it sit while you prepare the other ingredients.
In a large bowl, mix together the flour, sugar, salt, baking powder, and baking soda.
Melt the butter.
Pour the milk mixture into the dry ingredients and fold a few times, scraping the bottom of the bowl.
Mix in the melted butter until the batter is mostly smooth with a few small clumps, but do not overmix.
Let the batter sit while you heat your griddle or pan.
Melt a little butter on the cooking surface and cook 1/4 cup of batter per pancake.
Tips
The sweet miso adds tang and umami and is highly recommended.
Rice flour provides iconic softness and can be substituted with all-purpose flour.
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free blend.
