Whole Grain Apple Pancakes

Ingredients

  • 1/4 cup apple sauce
  • 1 tbsp ground flax seeds
  • 2 tbsp water
  • 1 tbsp apple cider vinegar
  • 1 tsp apple pie spice or cinnamon
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp sugar or maple syrup
  • 1 1/2 cups white whole wheat flour
  • 1 1/4 cups non-dairy milk
  • 1/4 cup diced dried apples (optional)

Preparation

  1. Preheat a griddle or non-stick pan.

  2. In a mixing bowl, add apple sauce, flax seed and water and stir well; let sit for 2-3 minutes.

  3. Add apple cider vinegar, apple pie spice, salt, and sugar and mix well.

  4. Add baking soda and baking powder; stir well and notice the mixture react and start to fluff up.

  5. Add flour and milk and mix to form a thick batter, avoiding over mixing.

  6. Fold in dried apples into the batter.

  7. When griddle is warm, scoop 1/4 cup of pancake batter onto griddle surface and cook for 2-3 minutes or until bottom is golden.

  8. Flip and cook the other side for 2-3 minutes.

  9. Remove from heat and enjoy.
