Fluffy Vegan Diner-Style Pancakes

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup white rice flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups oat milk
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons ground golden flaxseed
  • 1 teaspoon vanilla extract
  • 4 tablespoons vegan butter

Preparation

  1. Mix together the milk, vinegar, and flax. Let it sit while you prepare the other ingredients.

  2. In a large bowl, mix together the flour, sugar, salt, baking powder, and baking soda.

  3. Melt the butter.

  4. Pour the milk mixture into the dry ingredients and fold a few times, scraping the bottom of the bowl to incorporate all the flour.

  5. Mix in the melted butter until the batter is mostly smooth with a few small clumps. Do not overmix.

  6. Let the batter sit while you heat your griddle or pan.

  7. Melt a little butter on the cooking surface and cook 1/4 cup of batter per pancake until golden brown on both sides.

Tips

  1. You can substitute the rice flour with all-purpose flour, but it may reduce softness.

  2. For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
