Fluffy Vegan Diner-Style Pancakes
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup white rice flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups oat milk
- 1 tablespoon apple cider vinegar
- 2 tablespoons ground golden flaxseed
- 1 teaspoon vanilla extract
- 4 tablespoons vegan butter
Preparation
Mix together the milk, vinegar, and flax. Let it sit while you prepare the other ingredients.
In a large bowl, mix together the flour, sugar, salt, baking powder, and baking soda.
Melt the butter.
Pour the milk mixture into the dry ingredients and fold a few times, scraping the bottom of the bowl to incorporate all the flour.
Mix in the melted butter until the batter is mostly smooth with a few small clumps. Do not overmix.
Let the batter sit while you heat your griddle or pan.
Melt a little butter on the cooking surface and cook 1/4 cup of batter per pancake until golden brown on both sides.
Tips
You can substitute the rice flour with all-purpose flour, but it may reduce softness.
For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
