Vegan Gluten-Free Beet Donuts
Ingredients
- 1 1/2 cups gluten free all purpose flour
- 1/2 cup oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tbsp beetroot powder
- 4 tbsp melted vegan butter
- 1/4 cup unsweetened applesauce
- 2/3 cup nondairy milk
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
Glaze
- 2 cups powdered sugar
- 1 tbsp beetroot powder
- 2-3 tbsp nondairy milk
- 1/2 tsp vanilla extract
Preparation
Preheat oven to 350˚F.
In a large bowl, mix together both flours, baking powder and soda, salt and beet powder.
In a separate bowl, whisk together melted butter, applesauce, milk, sugar, vanilla extract and apple cider vinegar.
Using a spatula, stir wet ingredients into dry, stirring just until batter is smooth. Pipe into a greased donut pan.
Bake for 10-12 minutes, until tops are golden brown and a toothpick comes out clean. Let cool completely.
Whisk together glaze ingredients until smooth. Dip each donut into glaze and let excess drip off. Enjoy.
