Easy Vegan Chocolate Banana Bread
Ingredients
- 170 g all-purpose flour
- 125 g sugar
- 20 g cornstarch
- 2 tablespoons cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 small ripe bananas
- 100 ml soy milk
- 75 g canola oil
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon apple cider vinegar
- 50 g dark chocolate
- vegan butter or oil for greasing the pan

- vegan chocolate chips
Preparation
Preheat the oven to 180 degrees Celsius conventional (160 degrees Celsius convection)
Grease a loaf pan (23 x 10 cm)
In a mixing bowl, combine flour, sugar, cornstarch, cocoa powder, baking powder, and salt
Peel two bananas and mash them finely with a fork
In a mixing cup, combine soy milk, canola oil, and vanilla extract, then mix with the flour-sugar mixture
Fold in the mashed bananas and mix the batter for about 3 minutes
In a small bowl, combine baking soda and apple cider vinegar, then stir into the batter
Immediately pour the batter into the prepared pan and smooth the top
Cut the remaining banana in half lengthwise and place the halves cut-side up on the batter
Bake in the preheated oven for about 45 minutes
Let cool completely on a wire rack
Finely chop the dark chocolate, melt it over a double boiler, and drizzle over the cake if desired
Notes
The chocolate banana bread yields about 12 pieces and keeps airtight at room temperature for at least 3 days
