Easy Vegan Chocolate Chunk Muffins

Ingredients

  • 250g all-purpose flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 150g cane sugar
  • 250ml plant-based milk
  • 80ml oil
  • 1 1/2 tsp vanilla extract
  • 125g chocolate chunks or chips
  • 25g chocolate chunks for tops

Preparation

  1. Sift together dry ingredients in a bowl.

  2. Combine wet ingredients in a measuring cup.

  3. Make a well in the dry ingredients and pour in the wet ingredients. Stir until just combined, avoiding over mixing; lumps are okay.

  4. Fold in the chocolate chunks.

  5. Spoon the batter into a greased muffin tin or use liners until 2/3 full. Top with extra chocolate chunks. Bake in a preheated oven at 350 degrees for about 25 minutes.

  6. Allow to cool slightly before removing from the tray.

Tips

  1. Consider adding a little more chocolate than specified for extra indulgence.

  1. This recipe makes a dozen muffins.
