Easy Vegan Chocolate Chunk Muffins
Ingredients
- 250g all-purpose flour
- 1/4 tsp salt
- 2 tsp baking powder
- 150g cane sugar
- 250ml plant-based milk
- 80ml oil
- 1 1/2 tsp vanilla extract
- 125g chocolate chunks or chips
- 25g chocolate chunks for tops
Preparation
Sift together dry ingredients in a bowl.
Combine wet ingredients in a measuring cup.
Make a well in the dry ingredients and pour in the wet ingredients. Stir until just combined, avoiding over mixing; lumps are okay.
Fold in the chocolate chunks.
Spoon the batter into a greased muffin tin or use liners until 2/3 full. Top with extra chocolate chunks. Bake in a preheated oven at 350 degrees for about 25 minutes.
Allow to cool slightly before removing from the tray.
Tips
Consider adding a little more chocolate than specified for extra indulgence.
