Thick Chewy American Chocolate Chunk Cookies

Ingredients

  • 250 g soft butter
  • 100 g sugar
  • 150 g brown sugar
  • 1 tsp vanilla extract
  • 2 eggs (medium)
  • 360 g all-purpose flour
  • 1 tsp baking powder
  • a pinch of salt
  • 200 g chocolate chunks

Preparation

  1. Beat soft butter with both types of sugar for several minutes until creamy. Add vanilla extract and eggs and mix briefly

  2. Mix flour, baking powder, and salt, then add to the egg-butter mixture and stir until a dough forms (optionally with the dough hooks of a mixer)

  3. Fold in about 180 g of the chocolate chunks into the dough using a wooden spoon or spatula

  4. Preheat the oven to 350°F (180°C) conventional or 320°F (160°C) convection. Line two baking sheets with parchment paper

  5. Using an ice cream scoop, portion out about 12 dough balls, shape them into rounds with your hands, and place them with plenty of space on the baking sheet. Press down slightly. Bake about 6 cookies per sheet to allow for spreading

  6. Distribute the remaining chocolate chunks on the dough balls and press them in lightly

  7. Bake the cookies in the preheated oven for about 10-12 minutes. The edges should not become too dark, and the center of the cookie may still look a bit moist

  8. Remove the cookies from the oven and let them cool on the baking sheet for about 10 minutes. Then, carefully transfer them with a spatula to a wire rack. As they cool, the cookies will firm up a bit more
