Moist and Fluffy Marble Muffins

Ingredients

  • 24 paper muffin liners
  • 4 large eggs
  • 150 ml oil
  • 3 tablespoons plain yogurt
  • 180 g all-purpose flour (Type 405)
  • 1 packet baking powder
  • 100 g sugar
  • 2 packets vanilla sugar

Chocolate swirl

  • 2 tablespoons cocoa powder
  • 2 tablespoons milk
  • 1 tablespoon sugar

Preparation

  1. Prepare the muffin tin with paper liners

  2. Preheat the oven to 180°C conventional or 160°C convection

  3. Whisk the eggs with oil and plain yogurt until smooth

  4. Mix and sift the flour with baking powder

  5. Add all dry ingredients to the egg mixture and stir well

  6. Divide the batter into two portions

  7. Whisk cocoa powder, milk, and sugar to make a paste

  8. Mix one portion of batter with the chocolate paste

  9. Spoon a heaping tablespoon of the plain batter into each paper liner

  10. Top with a heaping tablespoon of chocolate batter

  11. Swirl the batters together with a toothpick

  12. Bake the marble muffins for 15 minutes

  13. Let cool briefly, then remove and bake the remaining muffins
