Easy Vegan Blueberry Muffins

Ingredients

  • 2 cups spelt flour
  • 2 1/2 teaspoons baking powder
  • 1/4 tsp salt
  • 3/4 cup cane sugar
  • 1 cup plant milk
  • 1/3 cup canola oil
  • 1 1/2 – 2 cups fresh blueberries

Preparation

  1. Preheat the oven to 180°C.

  2. Mix the wet ingredients and dry ingredients in two separate bowls.

  3. Combine the wet and dry ingredients and mix until a smooth texture is achieved. Do not overmix. Add the blueberries and fold them into the batter.

  4. Fill each muffin tin cup lined with paper liners with batter. Optionally, add a few blueberries on top. Bake for approximately 25 minutes.
