Easy Vegan Blueberry Muffins
Ingredients
- 2 cups spelt flour
- 2 1/2 teaspoons baking powder
- 1/4 tsp salt
- 3/4 cup cane sugar
- 1 cup plant milk
- 1/3 cup canola oil
- 1 1/2 – 2 cups fresh blueberries
Preparation
Preheat the oven to 180°C.
Mix the wet ingredients and dry ingredients in two separate bowls.
Combine the wet and dry ingredients and mix until a smooth texture is achieved. Do not overmix. Add the blueberries and fold them into the batter.
Fill each muffin tin cup lined with paper liners with batter. Optionally, add a few blueberries on top. Bake for approximately 25 minutes.
