Double Chocolate Chip Muffins
Ingredients
- 1 ripe banana, mashed
- 1/2 cup plant milk
- 1 teaspoon vanilla extract
- 3 tablespoons peanut butter
- 1/4 cup maple syrup
- a pinch of salt
- 110g spelt flour
- 25g cocoa powder
- 1/2 tablespoon baking powder
- 60g chocolate chips
- 1 teaspoon hazelnut butter each
Preparation
Preheat the oven to 175°C or 350°F.
Mash the banana and mix it with plant milk, vanilla extract, peanut butter, maple syrup, and a pinch of salt.
In a separate bowl, combine spelt flour, cocoa powder, and baking powder.
Add the dry ingredients to the wet mixture and stir until just combined.
Fold in the chocolate chips.
Add a teaspoon of hazelnut butter to each muffin portion.
Spoon the batter into muffin tins.
Bake for 20-25 minutes or until a toothpick inserted comes out clean.
