Double Chocolate Chip Muffins

Ingredients

  • 1 ripe banana, mashed
  • 1/2 cup plant milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons peanut butter
  • 1/4 cup maple syrup
  • a pinch of salt
  • 110g spelt flour
  • 25g cocoa powder
  • 1/2 tablespoon baking powder
  • 60g chocolate chips
  • 1 teaspoon hazelnut butter each

Preparation

  1. Preheat the oven to 175°C or 350°F.

  2. Mash the banana and mix it with plant milk, vanilla extract, peanut butter, maple syrup, and a pinch of salt.

  3. In a separate bowl, combine spelt flour, cocoa powder, and baking powder.

  4. Add the dry ingredients to the wet mixture and stir until just combined.

  5. Fold in the chocolate chips.

  6. Add a teaspoon of hazelnut butter to each muffin portion.

  7. Spoon the batter into muffin tins.

  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
