Vegan Banana Bread Blondies

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 6 Tbsp peanut butter
  • 1/4 cup plant milk
  • 1 1/2 cups spelt flour
  • a pinch of salt
  • 1 Tbsp baking powder
  • 1/4 cup chocolate chips

Preparation

  1. Mash the bananas until smooth

  2. In a bowl, combine mashed bananas, maple syrup, peanut butter, and plant milk, mixing well

  3. In another bowl, mix spelt flour, salt, and baking powder

  4. Combine the wet and dry mixtures until just blended, then fold in chocolate chips

  5. Pour the batter into a greased baking pan

  6. Bake at 175°C/350°F for 20-25 minutes
