Easy Vegan Snickerz Custard
Ingredients
Custard
- 3/4 cup plant milk
- 2 Tbsp corn starch
- 1 Tbsp cocoa powder
- 1 Tbsp peanut butter
- 1 cup coconut milk, full fat
- 3 Tbsp maple syrup
- a pinch of salt
Caramel
- 30g peanut butter
- 15 maple syrup
- a pinch of salt
Preparation
Combine the caramel ingredients in a pan and simmer for 5-10 minutes, then refrigerate for at least 1 hour.
In a saucepan, mix 3/4 cup plant milk with 2 Tbsp corn starch until smooth to avoid lumps. Add 1 Tbsp cocoa powder, 1 Tbsp peanut butter, 1 cup coconut milk, 3 Tbsp maple syrup, and a pinch of salt. Heat over medium heat, stirring constantly, until thickened. If it does not thicken, add more corn starch as needed.
Combine the prepared custard and caramel, such as by swirling or layering, to serve.
