Healthy Fudgey Chocolate Chunk Brownies

Ingredients

  • 1 medium sweet potato
  • 4 tablespoons maple syrup
  • 1/4 cup cocoa powder
  • 1/2 cup peanut butter
  • Optional: vegan chocolate chips or crushed vegan dark chocolate bar

Preparation

  1. Microwave, boil, or steam 1 medium sweet potato until softened.

  2. Mash it in a bowl.

  3. Stir in 4 tablespoons of maple syrup.

  4. Add 1/4 cup cocoa powder.

  5. Add 1/2 cup peanut butter.

  6. Place the mixture on a thin baking sheet and bake at 350 degrees for 15-20 minutes depending on desired gooeyness.

  7. Optional: Top or stir in vegan chocolate chips or crushed vegan dark chocolate bar.
