Healthy Fudgey Chocolate Chunk Brownies
Ingredients
- 1 medium sweet potato
- 4 tablespoons maple syrup
- 1/4 cup cocoa powder
- 1/2 cup peanut butter
- Optional: vegan chocolate chips or crushed vegan dark chocolate bar
Preparation
Microwave, boil, or steam 1 medium sweet potato until softened.
Mash it in a bowl.
Stir in 4 tablespoons of maple syrup.
Add 1/4 cup cocoa powder.
Add 1/2 cup peanut butter.
Place the mixture on a thin baking sheet and bake at 350 degrees for 15-20 minutes depending on desired gooeyness.
Optional: Top or stir in vegan chocolate chips or crushed vegan dark chocolate bar.
