Vegan Ice Cream Sandwiches
Ingredients
Cookies
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1/2 cup flour
- 1 tsp baking powder
- a pinch of salt
- 1 tsp vanilla extract
- 35g chocolate chips
Nicecream
- 2 frozen bananas
- 1/4 cup plant milk
- 1 tsp vanilla extract
Preparation
Mix all cookie ingredients together to form dough and shape into cookies.
Bake the cookies at 175°C (350°F) for 10 minutes.
Blend the nicecream ingredients until smooth.
Freeze the nicecream mixture for 1 hour.
Assemble the sandwiches by placing nicecream between two cookies.
Freeze the assembled sandwiches for 15 minutes before serving.
