Salted Caramel Cashew Ice Cream

Ingredients

  • 4 frozen bananas
  • 1 tablespoon cashew butter
  • 1 teaspoon vanilla extract
  • 1/3 cup plant milk
  • 4 tablespoons peanut butter
  • 1/4 cup maple syrup
  • a pinch of salt
  • 2 tablespoons plant milk
  • 1/3 cup cashews

Preparation

  1. Freeze the cashews for 2 hours.

  2. Blend the frozen bananas, cashew butter, vanilla extract, and 1/3 cup plant milk until smooth and creamy.

  3. In a separate bowl, mix the peanut butter, maple syrup, salt, and 2 tablespoons plant milk to make the caramel sauce.

  4. Fold the frozen cashews into the ice cream base.

  5. Swirl the caramel sauce into the mixture.

  6. Freeze the combined mixture until firm.
