Easy Vegan Tofu Chocolate Mousse
Ingredients
- 400g silken tofu
- 120g vegan dark chocolate
Optional additions
- 1 tsp vanilla extract
- 1-2 tbsp maple syrup
- 2 tbsp peanut butter
- a pinch of salt
- dark chocolate shavings to top
Preparation
Melt the vegan dark chocolate.
Blend the silken tofu and any optional ingredients except chocolate into a smooth puree.
Allow the melted chocolate to cool for 5-6 minutes.
Stir the cooled chocolate into the blended mixture.
Pour the mixture into ramekins or bowls.
Refrigerate for 30-60 minutes to set into mousse.
Notes
Per portion: 508 kcal, 19g protein, 32g carbohydrates, 31g fats, 7g fiber. Very high in iron and contains good amounts of other minerals.
