Easy Vegan Tofu Chocolate Mousse

Ingredients

  • 400g silken tofu
  • 120g vegan dark chocolate

Optional additions

  • 1 tsp vanilla extract
  • 1-2 tbsp maple syrup
  • 2 tbsp peanut butter
  • a pinch of salt
  • dark chocolate shavings to top

Preparation

  1. Melt the vegan dark chocolate.

  2. Blend the silken tofu and any optional ingredients except chocolate into a smooth puree.

  3. Allow the melted chocolate to cool for 5-6 minutes.

  4. Stir the cooled chocolate into the blended mixture.

  5. Pour the mixture into ramekins or bowls.

  6. Refrigerate for 30-60 minutes to set into mousse.

Notes

  1. Per portion: 508 kcal, 19g protein, 32g carbohydrates, 31g fats, 7g fiber. Very high in iron and contains good amounts of other minerals.
