Vegan Chocolate Mousse with Four Ingredients
Ingredients
- 5 tablespoons or 1/3 cup cocoa powder
- 1 can or 400 ml coconut milk (at least 75% fat)
- 1 cup tightly packed soft dried dates (about 18)
- Several drops vanilla extract
Preparation
Refrigerate the coconut milk overnight to solidify and separate it. When ready to use, turn it upside down, open it, and discard the transparent liquid on top, or save it for another use.
Pit and halve the dates, softening them in warm water if necessary.
Combine the dates with 2 rounded tablespoons of coconut milk and blend in a blender.
If you don't desire the date skins, strain the paste. Otherwise, add the remaining coconut milk and cocoa powder, and blend until smooth.
Add the vanilla extract and blend.
Blend the mixture until the desired consistency is reached, and add extra flavor if needed.
Refrigerate for several hours.
