Four-Ingredient Vegan Chocolate Mousse
Ingredients
- 5 tablespoons (or 1/3 cup) of cocoa powder
- 1 can (or 400 ml) of coconut milk (at least 75% fat)
- 1 cup of tightly packed soft, dried dates (use around 18)
- Several drops of vanilla extract
Preparation
Refrigerate the coconut milk overnight to solidify and separate it. When ready, turn it upside down before opening and discard the transparent liquid on top, or save it for another use.
Pit and halve the dates, softening them in warm water if necessary.
Combine the dates with 2 rounded tablespoons of coconut milk and blend in a blender.
If desired, strain the paste to remove date skins. Otherwise, add the remaining coconut milk and cocoa powder and continue blending until smooth.
Add the vanilla extract and blend.
Blend the mixture until the desired consistency is reached, and add extra flavor if needed.
Refrigerate for several hours.
