4-Ingredient Vegan Chocolate Mousse
Ingredients
- 5 tablespoons (or 1/3 cup) of cocoa powder
- 1 can (or 400 ml) of coconut milk (at least 75% fat for smooth texture)
- 1 cup of tightly packed soft, dried dates (use around 18)
- Several drops of vanilla extract
Preparation
Refrigerate the coconut milk overnight to solidify and separate it; when ready, turn it upside down, open it, and discard the transparent liquid that rises to the top or save it for use in a smoothie.
Pit and halve the dates, softening them in warm water if necessary.
Combine the dates with 2 rounded tablespoons of coconut milk and blend in a blender.
If you do not want the date skins, strain the paste; otherwise, add the remaining coconut milk and cocoa powder, and blend until smooth.
Add the vanilla extract and blend.
Blend the mixture until the desired consistency is reached, and add extra flavor if needed.
Refrigerate for several hours.
