Vegan Chocolate Chia Seed Pudding
Ingredients
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- a pinch of salt
- 1 cup coconut milk
- 1/3 cup chia seeds
Preparation
In a medium mixing bowl, sift the cocoa powder, and then add the maple syrup, vanilla extract and a pinch of salt.
Use a whisk to combine, add the coconut milk, then whisk again until smooth.
Add the chia seeds to the mixture, and whisk vigorously until fully combined.
Cover the bowl, and refrigerate until it becomes thick and pudding like. This will be a minimum of 4 hours, however the best thing is to leave it overnight.
Serve and enjoy.
