Chocolatey Chia Pudding

Ingredients

  • 1/4 cup cocoa powder
  • 2 tbsp maple syrup or other sweetener
  • 1/2 tsp vanilla extract
  • 1 cup coconut milk
  • 1/3 cup chia seeds

Preparation

  1. Sift cocoa powder into a medium deep mixing bowl

  2. Add maple syrup, vanilla extract and pinch of salt

  3. Whisk to combine until smooth

  4. Add the coconut milk on top and whisk to combine until smooth

  5. Pour the chia seeds on top of the mixture and either blend with a whisk or immersion blender

  6. The immersion blender will create a smoother texture

  7. Cover and refrigerate until the mixture thickens, and becomes pudding like, at least 4 hours, or preferably overnight

  8. Enjoy with fresh coconut whip cream and berries, if desired
