Chickpea Chocolate Chip Cookie Dough Bites
Ingredients
- 1 1/2 cups cooked chickpeas or 1,15 oz can of chickpeas, rinsed and drained
- 1/4 cup peanut butter or cashew butter
- 1/4 cup oat flour
- 2 tbsp maple syrup
- 3 tbsp brown sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/3 cup vegan mini chocolate chips (optional)
- 1, 4oz bar of vegan dark chocolate
Preparation
Dry off the chickpeas and add them to a food processor along with nut butter, maple syrup, oat flour, brown sugar, salt, and vanilla.
Pulse on high continuously in the food processor until a dough starts to form, and there are no visible chunks of chickpeas.
If using, add the vegan mini chocolate chips and pulse a few times to incorporate them into the dough.
Place the dough in the refrigerator to chill for 15 minutes.
Prepare a tray lined with parchment paper.
Using a cookie scoop or tablespoon, measure and scoop some dough into your hands, then roll it to form a dough ball.
Place the tray with the dough balls in the freezer to firm them up.
Melt the remaining vegan dark chocolate until smooth.
Take the dough balls out of the freezer. Once the chocolate is cooled, use two forks to dip the dough balls into the chocolate, ensuring they are completely coated.
Let excess chocolate drip off and then place the coated dough balls on the parchment paper.
After coating all the dough balls, refrigerate the tray for a few minutes to allow the chocolate to harden.
Once the chocolate is firm, your Chickpea Chocolate Chip Cookie Dough Bites are ready to enjoy!
