Vegan Peanut Butter Chocolate Chip Skillet Cookie

Ingredients

  • 1/3 cup (80g) peanut butter
  • 1/4 cup (50g) applesauce
  • 1/3 cup (80g) maple syrup
  • 1 tsp vanilla extract
  • 1 cup (120g) flour; use GF if needed
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • pinch of salt
  • 1/2 cup (100g) vegan chocolate chips

Preparation

  1. Preheat oven to 350F / 180C and grease a 6-inch cast-iron skillet.

  2. In a large bowl, whisk together peanut butter, applesauce, maple syrup, and vanilla extract.

  3. Sift in flour, baking powder and baking soda, and salt.

  4. Toss in chocolate and fold the mixture with a spatula until combined.

  5. Pour the batter into the skillet.

  6. Bake for 25 minutes, or until the center is cooked through; let cool for 10 minutes before serving.

Tips

  1. Serve topped with dairy-free ice cream for an enhanced dessert experience.
