Vegan Peanut Butter Chocolate Chip Skillet Cookie
Ingredients
- 1/3 cup (80g) peanut butter
- 1/4 cup (50g) applesauce
- 1/3 cup (80g) maple syrup
- 1 tsp vanilla extract
- 1 cup (120g) flour; use GF if needed
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- pinch of salt
- 1/2 cup (100g) vegan chocolate chips
Preparation
Preheat oven to 350F / 180C and grease a 6-inch cast-iron skillet.
In a large bowl, whisk together peanut butter, applesauce, maple syrup, and vanilla extract.
Sift in flour, baking powder and baking soda, and salt.
Toss in chocolate and fold the mixture with a spatula until combined.
Pour the batter into the skillet.
Bake for 25 minutes, or until the center is cooked through; let cool for 10 minutes before serving.
Tips
Serve topped with dairy-free ice cream for an enhanced dessert experience.
