Vegan Banana Bread

Ingredients

  • 3 ripe bananas
  • 1/2 cup plant-based milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup plant-based butter, melted
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup vegan chocolate chips (optional)

Preparation

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.

  2. In a large bowl, mash the bananas until smooth.

  3. Add plant-based milk, maple syrup, vanilla extract, and melted butter to the mashed bananas; mix well.

  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

  5. Combine the wet and dry mixtures, stirring until just blended; do not overmix.

  6. Fold in chopped walnuts and vegan chocolate chips if using.

  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
