Vegan Banana Bread
Ingredients
- 3 ripe bananas
- 1/2 cup plant-based milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup plant-based butter, melted
- 1/2 cup chopped walnuts (optional)
- 1/4 cup vegan chocolate chips (optional)
Preparation
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, mash the bananas until smooth.
Add plant-based milk, maple syrup, vanilla extract, and melted butter to the mashed bananas; mix well.
In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
Combine the wet and dry mixtures, stirring until just blended; do not overmix.
Fold in chopped walnuts and vegan chocolate chips if using.
Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
