Oatmeal Chocolate Chip Cookies
Ingredients
- 2 cups oats
- 1/2 cup gluten free all purpose flour
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 banana
- 2 flax eggs
- 1 tsp vanilla
- 1/4 cup coconut oil, melted
- 2 tbsp maple syrup
- 1/3 cup vegan chocolate chips
- 1/3 cup walnuts, chopped
Preparation
Pre-heat the oven to 175C or 350F.
Mix the oats, flour, cinnamon, baking soda, and baking powder together in a bowl.
In a separate bowl, mix together the banana, flax eggs, vanilla, coconut oil, and maple syrup. Make sure the oil isn't hot to avoid scrambled eggs.
Pour the wet ingredients over the dry and mix well to fully combine. Fold in the chocolate chips and walnuts.
Roll into golf-ball sized portions and place on a lined baking sheet. Use a fork to press down into shape.
Bake for 12 minutes. Makes about 20 cookies. Enjoy.
