Gluten-Free Vegan Banana Bread
Ingredients
- 1 1/3 cup mashed bananas (320g - about 3-4 bananas)
- 1 extra banana for topping
- 2 flax eggs
- 1/3 cup unsweetened applesauce
- 2 tsp vanilla
- 1 1/3 cup oat flour
- 1 cup rolled oats
- 3/4 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup chopped walnuts
- 1/4 cup vegan chocolate chips
Preparation
Mash the bananas in a large bowl, ensuring the weight does not exceed 320g to avoid a gummy texture.
Add the flax eggs, unsweetened applesauce, and vanilla, and mix well.
Mix in the dry ingredients, then fold in the chopped walnuts and vegan chocolate chips.
Slice the extra banana and place it on top of the batter.
Bake at 350°F for 65-75 minutes until the outside and sides are golden and crispy.
Check doneness by inserting a toothpick; it should come out clean.
Notes
This banana bread has no added sugar, is packed with fiber, and is very filling.
