Classic Banana Bread with Peaches

Ingredients

  • 1 3/4 cup flour
  • 1/2 cup oat flour (made by blending whole oats)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup brown sugar
  • A pinch of salt
  • 1/2 tsp cinnamon
  • 3 medium very ripe bananas
  • 1 cup plant-based milk with 1 heaping tablespoon fresh lemon juice (let curdle)
  • 1/2 cup melted coconut oil
  • 2 T vegan butter
  • 1 large peach, diced

Preparation

  1. Preheat oven to 350F.

  2. Mix all wet ingredients well.

  3. Mix dry ingredients well.

  4. Fold wet ingredients into dry and mix thoroughly.

  5. Fold in diced peaches.

  6. Line a loaf pan with parchment paper and grease the sides.

  7. Bake for 75 minutes.

Tips

  1. Using parchment paper prevents the sides from burning.

  2. Baking for 75 minutes instead of 60 minutes prevents the loaf from collapsing.
