Vegan Banana Bread with Peaches

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup oat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar
  • a pinch of salt
  • 1/2 teaspoon cinnamon
  • 3 medium very ripe bananas
  • 1 cup plant-based milk
  • 1 heaping tablespoon fresh lemon juice
  • 1/2 cup melted coconut oil
  • 2 tablespoons vegan butter
  • 1 large peach

Icing

  • store-bought vegan cream cheese
  • 1/2 cup icing sugar

Preparation

  1. Dice the peach into small pieces.

  2. Preheat oven to 350°F.

  3. Combine plant-based milk and lemon juice; let it curdle for a few minutes.

  4. Mash the bananas.

  5. Mix the wet ingredients together: mashed bananas, curdled milk mixture, melted coconut oil, and vegan butter until well combined.

  6. Mix the dry ingredients together: flour, oat flour, baking powder, baking soda, brown sugar, salt, and cinnamon until well combined.

  7. Fold the wet mixture into the dry mixture and stir until thoroughly combined.

  8. Fold in the diced peaches.

  9. Line a loaf pan with parchment paper and grease the sides.

  10. Pour the batter into the prepared pan.

  11. Bake for 75 minutes.

  12. Prepare the icing by mixing store-bought vegan cream cheese with 1/2 cup icing sugar.

Tips

  1. Using parchment paper can prevent the sides from burning.

  2. Cooking for 75 minutes helps avoid the loaf collapsing; shorter times may cause issues.

  3. Brown sugar is recommended for best results; other sugars may not work as well.
